In this workshop we will explore the medicinal properties and flavors of wild harvested and homegrown herbs. We will use both fresh and dried materials to infuse into culinary bases of water, vinegars, botanical oils, salts, fats, alcohol, and honey. This will include optional samplings of: wild tea blends, herbal popsicles, herb salts, compound butters and cheeses, herbal oils and extracts, herbal shrubs and oxymels, herbal/floral-infused honeys, electuaries, and more. In the last section of class, we will take a short identification tour of the herbs growing in and around the Northwoods Community Garden on the Nicolet Campus for further inspiration. Participants will leave with stimulated minds and taste buds as well as base recipes and instructions for future infusions in their own kitchens!
